Catalina Island Company Executive Chef, Roberto Hernandez, is bringing Catalina right to your kitchen. Today he'll be teaching you how to make one of his favorite dishes -- cod ceviche! This quick, five part video series shows you each of the steps you need to do along the way. To get started, here's a list of ingredients you'll need:

INGREDIENTS

  • 1 pound cod
  • 1 seedless cucumbers
  • ½ red onion (julienned) 
  • 3 lemons
  • 3 limes                                
  • 1 orange    
  • 1 jalapeño
  • ½ bunch chopped cilantro 
  • 1 avocado
  • salt and pepper (to taste)
  • tortilla chips

Part One

Chef shows us the ingredients we'll be using today! See above for the full ingredient list. The great thing about this recipe is the ingredients are fairly common, so you should be able to get them easy from your local grocery store. (Please remember to maintain social distancing while shopping, or, to utilize delivery/pick up services.)

Before we begin, let's get our ingredients ready:

  • Slice the cucumbers into rounds with the skin on
  • Julienne the red onions
  • Chop the jalapeño
  • Separately juice the lemons, limes and oranges 
  • Portion the cod

Part Two

Combine the cod, lime juice, lemon juice and salt in a mixing bowl. Let it sit for 20 minutes. Having the ingredients sit allows the flavors to combine. 

Part Three

Add the jalapeño and red onions to the mixing bowl. Let it sit for 5 minutes. 

Part Four

Add the cucumbers and orange juice, then toss together and let sit for another 10 minutes. 

Part Five

You're almost done! To finish off the ceviche, add black pepper and cilantro, then garnish with avocado. Enjoy with tortilla chips.
